Colombia Finca La Sierra Geisha Natural
Colombia Finca La Tierra has been operated by Johan and his friend Heber Sarria. They bought the 10-hectare farm in 2015 and have since developed it by planting shade trees, training staff, building drying beds for the coffee, introducing cow manure and other more natural ways of fertilizing, and planting about ten different coffee varieties – pink Bourbon, Caturra, Tabi, etc. The goal is to make the coffee progressively better and the farm completely sustainable.
For this microlot, they picked berries from their Geisha trees – the world's most exclusive coffee variety – which are now yielding a harvest on the farm for the second time. They have then dried the coffee in its own pulp – after a short time in closed barrels – on raised drying beds for 28 days. By letting the coffee berries dry so slowly, we have obtained a fruity and tea like coffee, you can really feel that much of the sweetness from the berries has gone into the coffee.
The coffee has lower acidity, and a little more body and sweetness. The result is a soft, full-bodied coffee with lively, tea roase dominant dry aroma, red apple and hibiscus notes.
